- Reviewed in the United States on October 14, 2005I'm just starting out on my own from college and I was looking for a nice set of pots and pans. I have a passion for cooking, so I knew that I wanted a set of quality pans that would last me (and my future family) a lifetime. I've never owned another set of pans (my parents owned a set of non-stick Analon though), so my opinion may be kind of one sided, but I love these pans.
I was originally worried about cleanup since the pans are not non-stick, only hard-annodized, but, if you follow the directions, and deglaze the pan when you get a serious mess, cleanup is actually a breeze.
The pans heat up amazingly fast and have consistent heat across the surface so that food cooks quickly and evenly. Due to their aluminum rather than steel construction, they are also fairly light-weight and the cool-V handles stay cool, even when the pan has been sitting on the stove for a long time (they also allow placement in the oven which can't be done with plastic costed handles).
These pans have been a joy to use and I look for even the smallest reason to use them. I only have a few small complaints. The 12" pan is showing some dull spotting. I'm not sure what caused this, but I think some Comet (reccomended by Calphalon as a cleaner) was left to sit on the metal, possibly causing a reaction. I doubt this is covered by the warranty, although even if it isn't, the pan still looks great and works beautifully.
The only other problem is that it is hard to find the Calphalon Commercial line in brick-and-mortar stores (at least the ones I go to). Stores tend to sell Simply Calphalon or some of the other lines. These tend not to match the commercial ones very well (different handles and lids), so you may have to stick with what is on Amazon (not that it is a bad thing, Amazon is great for products like this and almost always has a MUCH lower price).
In short, I am happy (ecstatic) with my purchase, and I would recommend Calphalon (specifically from Amazon) to anybody who is serious about cooking.
- Reviewed in the United States on May 15, 2009Having received these pans and used most of them I am bit perplexed by the negitive reviews which mostly complain about unbelievable sticking problems when cooking with them. Let me first say that I was a professional chef/cook for more than 20 years and worked all around the world. The USA industry standard in most pro kitchens is generally heavy aluminum with teflon coating only being found in egg pans. Caphalon is generally considered too expensive to be used in restaurants, but at these new prices (I got my set for $153 with FREE S&H) that may change. Folks all I can say about the nay sayers is either they got a bad batch or even more likely they just don't know how too cook! These pots and pans are WONDERFUL! They are of a good thick gauge, their bottoms are finely grooved to retard sticking even more, and the metal saute pan handles do NOT become hot even after cooking with them for an hour! The two dutch ovens are excelent and the first thing I did was make Gumbo, which I browned a roux with rendered bacon fat until it was red, sweated the holy trinity (celery, onions & peppers) and then braised the poultry and shrimp for an hour in the thick creole gravy. I also made dirty basmati rice (which involves well sauting chopped chicken livers and the holy trinity and then adding and boiling REAL rice) in the 3-qt pot and NOTHING stuck! The only reason I didn't give them 5 stars is that the anodizing on the inside bottom seems to get a bit muddied looking after use, so I'll keep the issue of longevity open to a futher update...
More than 6 months now and they are still great!

I had read the complaints about these pans, but thought my mother was endorsing them as well, so I bought them. However, I found myself in the same boat with all of those complaining of the sticking problems. I lowered the temperature, I tried the thin coat of oil, I allowed my meats to warm to room temperature and things were still not great to horrible. This is also way too fussy, especially in light of the fact that there are brands of hard anodized that do perform as they say without all the nonsense. My mother had actually endorsed "Circulon," which does work as it says it will. Almost nothing sticks to these pans and most of the time they clean under running water. On the rare occasions when something sticks a bit, you'll need to actually wipe with a cloth. This applies to all of their products I've tried (pans, pots and cookie sheets). Best of all, NO FUSSY RULES! Just goes to prove you need to listen (carefully) to your Mamma!

A lot of people said everything sticks to them ... but then there were a lot of people that said that those people don't know how to cook with the pots and pans and led into instructions on how to cook properly with them. So I bought them because I thought I could cook properly with them and EVERYTHING STICKS TO THEM. In the month I have used these I have followed all the directions: I cook everything on low (surprisingly food does cook fast on low with these) and hand wash them with soft sponges. Yet everything still sticks to these. Oh and there really isn't any lids in the set that fit the pans ... usually the lids are universal in sets like these to fit the pots and pans ... not this set. But they do work and it is a fairly inexpensive set. They look nice and they clean pretty easily.
