Harder than steel, this deep, rounded, 12-inch skillet is rugged enough for everyday use and large enough for cooking family-size meals. At 2-3/4 inches, it's deep enough for stir-frying on the stovetop, roasting vegetables, and for baking macaroni and cheese or a big cherry cobbler in the oven (safe to 500 degrees F). Because it's made of hard-anodized aluminum it heats quickly and evenly without hot spots, and its exterior resists scratching and denting. For readily releasing food and easy cleanup, the interior is coated in DuPont's exceptionally durable three-layer Autograph nonstick. The skillet's hollow, 18/10 stainless-steel handle is riveted for strength and stays cool on the stovetop, and it has a hole to facilitate storing on a hook or peg. The skillet should be hand washed.     I'm a bit reluctant to review a skillet, folks. Even if it is the Anolon Professional Deep 12-Inch Nonstick Skillet. So I will offer a nonstick review, though perhaps not as deep a review as those who have already expressed their views on this skillet.

    First, let me comment that this is not a true skillet as defined in my Webster's Collegiate: it is not small; it does not have three or four long feet; we do not cook with it on our hearth.

    I think we can move past this point, as this sleek, solid, heavy frying pan is a modern skillet in every sense. I've been using one of these skillets for the last 15 months to fry, sauté, even stew all sorts of foods.

    The surface has retained its nonstick character with nary a blemish; the handle remains tightly bolted to the pan with no trace of a wobble; the underside has not blacked or faded.

    What's more, this is a cool looking skillet: flipped over it looks sort of like the bridge on the Enterprise. I'd have to give this frying pan high marks for versatility and durability.

    Anolon not impressed with the coating came off in no time didn't cook evenly I through this away long ago

    I received my pan as a wedding gift a little over a year ago. I also received the set. I have not had any problems with the set, just this pan. The non-stick coating is not working anymore. In the warranty it states that this can happen with too high of heat- how do you cook on your stove with too high of heat? I also bought a lid for the skillet and it does not fit

    well. I need a new skillet. This one is just a big disappointment.

    Rather than repeat everyones comments already praising this pan for the size and deepness of it. I'd like to share a cooking experience using this (and other non-stick anodized pans) family sized - nothing will spill out - pan.
    Fresh Asian rice noodles and chow mein (flour/egg) noodles, are very difficult to cook. Unless you use a LOT of oil - they will stick to just about any fry pan known to man. So I bought this pan to replace my cast iron pan and test out cooking these noodles. They now come out purfectly... with very little oil. The heat is as even as cast iron, and nothing sticks to it. It is much deeper than any fry pan I have and it lets me flip things over without loss of contents (noodles).
    One note - even when you use non-metal utensils on these types pans - do not put a lot of pressure or scape a lot!! They do "scratch" the coating --- very slightly... and over time the coating not longer shines like it was brand new.

    Just because the skillet is big and deep, don't think this is not good for single serving meal.
    This skillet is deep, but it lacks helper handle, meaning that it is not the best choice for cooking a lot of food. Partly for the same reason, this pan's cooking capacity when stir frying is smaller than with a frying pan of comparable size. (The other reason being flat bottomed.)
    What I think this skillet is best for is something that needs a lot of space to be cooked, turned, or stirred. One or two mackrel can be very comfortably pan grilled. Fresh mackrel releases a lot of moisture and fat, but the fish still accepts sauce very well since released moisture can be quickly condensed in this pan, thanks to the large surface area. Two to three servings of risotto is not a lot of food, but requires a lot of space to stir continually over 20+ minutes. This deep skillet serves this purpose very well. Since the surface area is large, it is also good for braising with some fluid which is to be condensed towards the end.
    Another good use for this skillet is to cook dried pasta or boiling large foods. Boiling does not require the pan be lifted or stirred, so lack of helper handle does not incur difficulty. This 12 inch diameter comfortably accomodate dried pasta, and holds enough water to cook 2 to 3 servings of spaghetti comfortably.
    This skillet is made of high quality hard anodized alminum. Although the thickness is slightly less than Calphanon's top end products, the heat is applied very evenly on gas stove, and is somewhat lighter to my hand. I personally prefer non-teflon (not non-stick) pans but this one works pretty well. (As long as I have extra empty space, I feel this nonstick is easier.)
    This skillet does not come with a lid. I strongly recommend to find a lid that fits well if you buy this product.

    As far as the quality of the skillet itself goes, it is very good.
    Good heavy duty quality. I highly reccomend it. The ONLY drawback I have with it is the handle is very long, which in a lot of cases is probably a plus, but in my particular situation it isn't. I have heard others mention that it changes color on it's outer surface, as yet I see no evidence of that. But it may later, but I don't cook on it's outer surface anyway so that'll be no problem.

    I have been paything hundreds of dollars trying to find a wok like cooking utensil but I've yet found one. This one looks good with so many good ratings but it has a lethal flaw: its nonstick coating can be peeled off by anything -- a turner or simply a spoon. So, why do you throw in so much money to buy something that can cost your health in the near future? You might get canser if you eat those coating chips.

    This is the ultimate long life skillet, still using this item. In fact just used it yesterday to make a few meals, goes from stove top to oven without a problem. Easy clean still very well used.
    UPDATE 04/24/2021: Some wear and tear is starting on the bottom, food is getting stuck, but I will not complain. I have definitely gotten my use out of this pan. I would still recommend it
